Father’s day is fast approaching and oh do we have a treat for you! Not just your traditional Sunday Roast this year, we have gone one step better. Out with the beef and in with the pork…all of the pork. A whole pig in fact! That’s right the BQA Hotel this Sunday will prepare for your eating and dining pleasure a whole roast Tamworth pig. As a seasonal restaurant in Dumfries and Galloway we’re really trying to go the whole hog for you.
Tamworth pigs are a traditional breed, among one of the oldest in fact. They are distinctive in their colour and can range from a light ginger to a deep auburn. These pigs have a very thick, coarse coat which makes them the perfect breed for outdoor breeding. Here at the BQA Hotel it is very important to us that we ensure we are sourcing the freshest local ingredients, which is why the Tamworth pig is perfect! Reared on the Stonely Smallholding, that’s only 5 minutes from Thornhill. Unless we reared them ourselves, we couldn’t get any closer! At Stonely they live as natural a life as possible, outside and free range being able to go in their ‘wallow pits’ whenever they feel like it! Pigs don’t sweat so during the warmer months when they molt they use mud as a suncream to protect themselves.
Tamworth pigs are actually registered as an ‘at risk’ breed with the Rare Breed Survival Trust. During the Second World War society demanded more commercial breeds that were more productive in comparison to the Tamworth. This resulted in the Tamworth becoming less favoured and so a rare breed. You may think choosing Tamworth pork is detrimental to the breed as it’s now so rare, however you are actually keeping the breed alive! The BQA, as a seasonal restaurant is concerned with the welfare of the environment and sustainability which is another reason for the choice of breed.
Tastes have changed over the years, with demand moving towards more lean meat. The Tamworth matures slower than other breeds and consequently has more fat marbled through the meat. Although lean meat may be favoured, it is in fact the fat that adds the great flavour to the meat. That is why the Tamworth produces some of the most succulent pork as well as being great for bacon.
