Will’s Word – Looking forward to the Shoot Season
It’s back to the kitchen this week at The BQA restaurant in Dumfries with the latest snippet from Head Chef Will Pottinger.
As we move further into Autumn and into September, we look forward in anticipation to the first shoots of the season. The start of the shoot season means the first of this seasons game birds making their way to the hotel. As a seasonal restaurant, the dishes prepared for our menus are focused around products coming into season to ensure the freshest taste is always guaranteed for our customers.
The month of September welcomes the fig onto the BQA restaurant in Dumfries menu. Caramelised and served with goat’s cheese, a rocket salad and local honey this dish is a starter featured on our Specials menu. Sourcing the honey used in the dish from Stonely Smallholding, the BQA restaurant is continually demonstrating an enthusiastic approach to supporting local farmers and suppliers.
The BQA restaurant in Dumfries is also looking forward to adding new lamb dishes to the menu. Receiving lamb from Auchenbrack, another local supplier, our menu will soon feature dishes with this lamb as the star of the show. As the season progresses from Spring to Autumn, the lamb’s flavour develops, allowing for different types of dishes in comparison to the beginning of the season.
The wait is over. The start of the shoot season has finally arrived. The BQA Hotel restaurant in Dumfries looks in anticipation towards the first of the game birds to arrive. The menu will soon be filled with delicious flavours such as pheasant, partridge and guinea fowl. At their most tender during this time, dishes created using these flavours are certainly a tastebud treat.
Wild Raspberry Fool
Making the most of the succulent Scottish raspberries of the Summer as we move further through Autumn, a dessert featured on our Specials menu is the Wild Raspberry Fool. Served with hazelnut biscuits this is one dessert on our menu that is still holding onto a little piece of summer.
